Domaine Pavelot (Jean-Marc et Hugues)
Aux Gravains Savigny-lès-Beaune 1er Cru Pinot Noir
I found this to be meh on day 1, very young wine. Day 2 paired with pate was fantastic.

Jan 3rd, 2022Aroma with Chinese medicine. Matured. A bit sour spicy. Acidic. Plum based. Close to Japanese Umeboshi that is plum pickles, sour and salty. This is extreme expression. Just a image which is come up with. 2008 @1850, Kping -, 210806-210920

Aug 6th, 2021Dark rubi robe, nose of spices and dark berries. Very good medium length mouth with good balance and concentration. Its better than the vintage says. And in no rush to drink. Its a really good bottle !

May 25th, 2020I have a 50/50 experience with this producer. Sometimes delicious, sometimes bretty and nasty. This was one of the happy experiences. Unusually delicate for Pavelot. Beautiful rose petals and light spice

Dec 15th, 2017I am tasting through my Pavelots - as it seems i made a mistake stocking up on these. The 2010 Gravains is better than the 09. Dark berries, cranberries, chalky. At the moment kind of dull and i think this will not improve with time there is simply not enough fruit. This producer lost its way.

Nov 26th, 2017After the 2009 Narbantons disaster on thanksgiving i tried the 1er Cru Aux Gravains today - this has a touch of green - so i assume some stem inclusion. It’s better but underwhelming as well really no fruit or age character after 8 years metal undertone. 2009 was hot and it seems Pavelot has picked at the wrong time too early? My advise try the 09’s from and make cellar space if you are disappointed.

Nov 26th, 2017You never know which Pavelot is going to show up. The perfumed, airy and structure version, or the gloppy Brett bomb. Thankfully this was the good one.
