Pale straw. Minerality, tart citrus, white flowers, tarragon, white pepper, parsley, lean salinity, med body, probably some malo, smooth on the palate. 10% new French oak (piecemeal, to break in barrels for Chassagne), oak spices. Fermented in stainless steel. They don’t let the fine lees settle, but transfer to barriques before they settle to add extra textual breath.
