First time trying a sparkling chenin, and this producer obviously makes this a safe place to start.

Golden in the glass. Appears to be slightly oxidized. Aromatically, this is apples and pears all day. Reminds me of spiced apple cider from the holidays. Ripe golden delicious apples mixed with cinnamon and holiday spices alongside those Harry & David pears you get in gift baskets. Undoubtedly chenin Blanc on the palate with sharp bubbles, and a mineral driven backbone...slate and limestone. As it warms, it gains a slightly waxy trait to it and drinks like a straight up non-sparkling chenin. Unique. Paired perfectly with sushi.

Wow. Hard to describe, but so delicious. Some citrus, grapefruit, apricot, chalk, zest and marzipan. This is juicy, but not fruity. VERY mineral, really focused minerality. Can’t wait to see how this develops. Terroir speaking very clearly here.

French bubbles but not Champagne for Christmas Day morning. Low Fizz and bottled at only 2.5 atmospheres (most Champagness are between 5 and 6). Notes of toffee apple. Light mousse. Medium to full bodied- finishes Dry. Quite minerally. These Wines apparently have a long life. 100% Biodynamic Chenin Blanc.

Creamy, lemon meringue pie & tart au citron, Bags of honey and creamy green apple. In the mouth it's incredibly fresh with a sharp acidity though full, almost unctuous breath though, lovely!

after a full day of tasting, there's nothing quite like sabering a huet out the second floor window with a survival knife.
