Delicious. Nice viscosity, green apple, yellow stone fruits, lemon, lime, tropical, honey, soft chalkiness, sea fossils, white and yellow flowers, excellent acidity w/ nice balance and full minute finish.

Holy cow this is good. Still so fresh. Deep, brothy, minerality. The marrow of the earth. Beautifully balanced acids. Love it.

Mar 16th, 2025Really nicely done for a global warming era Chablis. Nose has lots going on. Orchard fruit, citrus zest, deep, slightly brothy limestone minerality, meadow clover. On the palate it’s lean but full-flavored. Still feels like it needs a year or two for all the angular components (acids, minerality, some phenolic bitters) to integrate, but it’s very, very good now.
