Medium+ Ruby, youthful pronounced aromas of fragrant red berry fruits, pepper, smoky and earthy notes, aged in French oak for 15-17 months. On the palate vibrant flavors of black raspberry, strawberry and cherry with notes of forest floor. Medium+ acidity with soft rustic tannins on long finish ending with tobacco and earthy character. Very nice now will improve in the cellar! Paired nicely with a red snapper topped with roasted tomatoes, garlic, olive oil, basil and balsamic reduction. Yum!

A lot of my Burgundy loving friends like rich white burgs with cheese. I haven't had any luck with the pairing, but thought I would give it another shot with homemade Mac and cheese. It didn't clash, but this rich, concentrated, energetic Chassagne was better on its own.
