The Demière-Ansiot 2006 has the sort of flavor profile I adore in a Blanc de Blancs. Opens with lush, expressive aromas of kumquat peel, apricot, brioche and smoke. In the mouth, it's intense, generously layered with a fine, arching acid spine. Amid a rhythmic staccato of citrus and orchard fruit lies an undercurrent of mouthwatering salinity, crushed shell and sea foam, sweeping on through a lengthyand persistent finish. Bravo. Bravo.
