It’s been a long day for both of us getting here but, we are finally here! 😃👍

Kicking it in the D&S Lounge means starting with Champagne. 🍾🥂 The best room of the entire house.

Notes soon and if I get lazy, my previous notes will stand.

Happy Friday and weekend! Cheers!

I’ve had this many times but, never just sat and enjoyed full bottle with Sofia and pick it apart to write detailed notes. A great Costco price on this Cuvée has changed that for tonight.

The nose reveals; bruised, green & golden apple without skin and a hint of tartness, touch of of apple cider, Bosc pear, pineapple, lemon/lime zest, quince, cream soda, vanillin, very light white spice, caramel notes, great chalk, sea fossils and spray, bread dough, spring flowers, jasmine and yellow lilies.

The body is full and lively. Some
@Severn Goodwin might want to decant this one. The acidity is fresh, big, yet restrained on the long set. Bruised, green & golden apple without skin a hint of tartness, touch of of apple cider, Bosc pear, pineapple, lemon/lime zest, quince, more cream soda on the palate, vanillin, very light white spice with a tad of palate heat, caramel notes, great chalk that really pops, saline, haunting iodine notes, sea fossils and spray, really nice grey, fine, grainy volcanic minerals, light woodiness, bread dough, spring flowers, jasmine, citrus blossoms and yellow lilies. The long finish is, rich, well balanced, polished and persists minutes. Really hitting its mark tonight.

Photos of; the House of Bollinger (007 James Bond), the library area, their miles of chalky caves and one of their Grand Cru Vineyards.

In the name of science, a few champagnes/sparkling wines were sampled today in an effort to help a friend for comparative research reasons. Hard way to spend a Monday...

Probably the most rich out of the lineup and always a favorite of mine. Definitely oxidative in style. Sweet toasted oak, marzipan, honeycomb & key lime pie. The mousse with Bolly is always one of my favorite traits...incredibly smooth with zero tart fruit. Thanks

Medium gold, light mousse, but developed and loaded with bruised golden apple, pineapple, pear, and toast. Bright acidity resurrected this seemingly tired wine. Made from reserve wines 5-15 years old.

Clear medium gold, small bubbles with medium persistence; pronounced intensity aromas of toast, brioche, raw dough, rye bread, whey; dry, medium plus acid, subtle tannic grip on gums, creamy mousse, medium alcohol, medium plus body, medium plus intensity flavors of yellow apple, lemon, lime, rye bread, toast, raw dough, whey, nuttiness, creamy; full body balanced with high acid and medium alcohol, long finish and intense autolytic flavors suggest malolactic fermentation and long ages on lees; outstanding

Had this on magnum many times; this was one of the less satisfying times as the wine appeared — despite vivacious effervescence — somewhat lifeless and dull, but only on the palate; the color and nose were their normal great.

70 percent Pinot noir! This would be damned delicious with some cheese and a dark bread. The fruit notes on it are slightly cooked, and the toasty taste is a perfect char.
