Grapes are left on sand near the sea and dried for 2-3 weeks before pressed and fermented, similar to sherry, neutral spirit is then added to halt fermentation, released after spending 9 years in cask. Amber to medium brown in color, smell of toffee, caramel, vanilla, brown sugar and pear, medium to full body, not as sweet as PX, excellent dessert wine.

Cesar Florido Moscatel Pasas -- Levels and levels of flavor. Intense dried fruits, citrus zest and toasted toffee/ caramel. Hot and silky. Fantastic with the several post-prandial goat cheeses. Definitely finished off my palate, though, could use a smidge acidity.
