It’s Miller time. Well…actually Billecart time. I like this more than I buy it. One of good cuvées easily found in 375ml.
The body creamy, layered, nice c02, bruised golden & green apple, ripe Bosc pear, pineapple flesh, tropical melons-mango driven, lime & lemon zest, cream soda, cream, white spice-ginger, bread, yeast, brioche, soft but grainy moist chalkiness, sea spray/fossils, slightly chard sourdough toast, wet/softened alluvial, limestone, wet river stone, notes of flintiness, yellow lilies, white orchids, fruit blossoms, jasmine, rainfall acidity, excellent balanced fruit & earth, tension, structure with a juicy two-minute polished finish that falls onto beautiful minerality.
BTW, home grown tomatoes with Companion Bakery wheat sourdough, lightly toasted w/ olive oil, burrata, Tondo balsamic (stunning), olive oil & fresh basil never gets old.

Starter at the Downs Club Magnum dinner on Wednesday night. No detailed notes. Very easy to drink - not austere at all. Sweetish palate (high dosage?) but finishes dry. A crowd pleaser.

Dec 8th, 2021Billecart is always something special, tried a new batch. Pale lemon yellow, fine bubbles, nice mousse with aromas of fresh fruit and citrus scents. On the palate flavors of ripe stone fruits with chalky mineral tones and noted presence of Pinot Noir with slight berry notes. The long finish was well balanced showing a smoky mineral character. This N.V. is blended using 50% of its reserve wine. Very Nice, Enjoy!!

Not sure where Delectable’s source for this cuvée is at $46. I paid just under $30 for a 375ml.
Beautiful mouthfeel/mousse. Sour lemons w/ hints of meringue, lime zest- candy, kiwi, pear, white peach/nectarine, understated notes of pineapple juice, beautiful, soft grey volcanics, edgy, soft chalkiness, yeast, soft, melted, salted caramel, white spice, sea spray, cream, spring flowers, jasmine, some yellow & white lilies excellent soft acidity with a smartly polished & well balanced finish lasting minutes.
