If you ❤️ #Chablis take note, this is certainly and ode to the bright, tense and acid driven style of a very fine village Chablis with just enough of that Etna rock to distinguish it.

Having just had its older sister the Pietra Marina a few nights ago, this was an interesting comparison. Acid, mineral, and lemon rind are all common components. This cuvée is a little less layered and complex, with tons more salinity and a slight chalkiness (or waxiness?) to the citrus flavors. Certainly very refreshing...maybe it would age, but why?
