This fractionally blended Champagne comes from one 8000L barrel, originally filled in 2007. The current batch was drawn off containing 2007-2011, with the youngest elements in barrel for just under a year. This is very rich, brassy, pie crust style Champagne that maintains its steely minerality... Every bottling is better than the last! Excellent with Cinnamon's anchovy gougeres!!!!

This is unique and amazing. Flavors of apple, marzipan, tropical fruit, chalk, and I feel like some oak, but this is made in a giant solera over many years. Overall a most interesting champagne and look forward to trying future versions. No dates on bottle.

Medium gold color. Clear. Powerful aroma of yeast, butter, nuts, toast and brioche. Mushrooms. Hint of citrus. Apple. Cremy. Flavorful. Became very interesting after a couple of minutes of aeration in the glass.
