Its the Tepezate, one of the smoothest Mezcal’s I’ve had.
La Tierra de Acre Mezcal Tepeztate is a uniquely complex and eccentric product. The agave is harvested from the wild at ~25 years old, and the abundance of flavors absorbed over the plants long life are reflected in the final product. Floral, herbal and root aromas abound, with medium instensity on the nose with the fresh sweet and citric notes. Souced from the foothills around Santa Ana del Rio in Oaxaca, Tepeztate is made from Agave Marmorata, roasted for five days and milled using the Tahona method. 45% ABV.
Didn’t use this in the Chili Tapenade, used the Smokey Illegal Mezcal instead, can’t waste this juice in Tapenade

Orange-ecru foam dome bubble puff regresses to cat paw print then scorpion tail. Dark auburn and andalusite color is stunning. Brown bread toast nose with hints of pancake, turbinado and honey. Great dunkle profile bolsters the palate in an embrace of pecan, brazil nut, cola nut and rye points, with a baking chocolate sprinkle. Tea and coffee notes linger.

What a playful, lively burgundy pinot! Rose petals and cherry, hay and an earthy thing. Quite inviting. The palate is wonderfully made, a strong acid drive, a silky mouthfeel which leaves a layer of tenderness on the sides and which lasts for ever, even after the fruity notes of the finish fade away, a good mater with great balance, a good, powerful mid palate with a power house of a fruit and gentle tannins that help this silky layer expand for ever. This is a serious burgundy Pinot, and I'd like to have that every time I pop up a bottle from these parts. Organic wine. It raised to challenge of a spicy (hot hot Trinidad scorpion hot) dish which is not usually a burgundy thing. — 5 years ago

Depends how much you eat,Grosse Lage Riesling Kabinett from Rheingau.
Nose of chalk, lemon, lemon curd, a tiny zesty touch, some vanilla, some bready, leesy notes too.
The palate is clearly sweet and has RS, giving it a viscosity not unlike syrup, some great lemon curd notes all along, some grip in the rear and a long, fresh, zesty, lemony finish with almost a peary and peachy touch that makes you reach for the bottle for another immediate pour. I would have loved a bit more tension but this is really good in itself and it stood its ground against scorpion pepper Tabasco without breaking a sweat. — 2 years ago

Very appealing, elegant nose that has delicate white and stone fruits with a fam dusting of mineral, smoky, chalkiness with a light creamy edge. Great palate with lovely balance and again an elegant, mineral, ripe lime. Mineral finish — 11 years ago
