Hello Delectable….
This is tasting notes for Dewazakura Junmai Daiginjo Yukimegami 48.
Yukimegami means Snow Goddess in Japanese and 48 means the rice polishing rate…senmaibuai.
This is a very smooth sake from Tendo City in Yamagata where they get lots of snow….very important when making sake.
Persimmon, white Asian pear, lychee, white nougat chocolate, cinnamon and green melon.
Round and savoury finish.
For dinner we had local Gindara slow braised in soy dashi with ginger and green onions — 3 months ago

This green can, made from the newest/youngest rice of the season and dated with a manufacturing date of Nov '21 is delicious. It offers a subtle aroma and similar sweet entry as the gold can version but much better of the alcohol so it doesn't have a burning hot finish. Good with some steamed edamame as a pre dinner warm up. — 4 years ago

This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands. — 9 months ago

Wow! Deep burnt orange in color. Big nose of plum (surprise). Medium bodied palate of… plum! And a real plum at that. Not too sweet, rather just as sweet as a very ripe plum. The finish is like what you get from a bite into an actual plum. This ain't your father's plum wine. This plum flavored sake is a fantastic finish to a Japanese or any other meal.
