I don’t think I’ve ever had a white that benefited so much from air. When we opened this at midnight last night, it was really dead, with almost no energy. But the nose was really complex, and the structure was there. So I put it in the fridge (vinovac.) Today, it’s excellent. Creamy length and plenty of flavor depth. — 2 months ago

Hahaha, agreed. Wine appreciation and selection is definitely something I love in pet because it’s diametrically opposite to my “work” (I.e. analytic) thinking. Let there be subjectivity and chaotically numerous variables.

Valpolicella Superiore Corvina Blend 2010

Roccolo Grassi is perhaps less well known than the famous Amarone producers from Valpolicella, Veneto. The winery has been active since 1996, and produces impressive wines, Soave, Valpolicella, Amarone and Recioto. This 2010 Valpolicella in majority consists of Corvina and Rondinella and truly is a baby Amarone. Pitch dark, black cherries, licorice, but also freshness and soft tannines.
