This intention is reinforced by everything from the whimsical labels (Flying Goat, Goat Bubbles, YNOT), to the critical acclaim Flying Goat Cellars has garnered for its impressive wines, to the impeccably balanced and delicious Pinot Noir and vintage, traditional method sparkling wines.
This 2016 blanc de noirs sparkler — made with Pinot Noir hailing from the Bien Nacido Vineyard — is medium gold in appearance, with a fine and creamy mousse, and fresh notes of just-ripe yellow apple, pear, white peach, lemon zest, citrus blossom, biscuit, toast, brioche, toasted almond, and marzipan. It has a lingering, elegant finish.

A prestige multi-vintage Rosé Champagne crafted from estate-owned vineyards in the Montagne de Reims, including Rilly-la-Montagne, Chigny-les-Roses, and Ludes. Blend composition; predominantly Pinot Noir, supported by Chardonnay and a smaller proportion of Pinot Meunier, with a measured addition of still red Pinot Noir wine to achieve its delicate rosé hue. Produced in small batches, this cuvée emphasizes finesse, purity, and subtlety rather than power.
Aromas & Flavors
Fresh wild strawberry, raspberry, and red cherry glide out gently, followed by rose petal, citrus zest, and faint brioche notes. The fruit profile is precise and lifted, with a quiet chalky undertone and restrained pastry character.
Mouthfeel
Exceptionally delicate and refined. The mousse is fine and silky, with bright acidity carrying the wine effortlessly across the palate. Light-bodied for Champagne, elegant and poised, finishing clean and graceful without weight or richness.
Food Pairings
Tuna tartare, salmon sashimi, shellfish, light charcuterie, soft cheeses, or as an elegant aperitif in good company.
Verdict
Not my preferred Champagne style, but undeniably well executed. Subtle, polished, and extremely delicate, this Rosé delivers finesse over intensity and proves its quality through balance and restraint.

Like the label suggest this was a very fun wine. Smelling strongly of herbs and green vegetables it had a very light and simple taste to it. Strong enough to hold up against aged Gouda and a spinach salad. Delicious and in my opinion a great value. — 6 years ago
Well integrated Cabernet Franc. Dark plum and blackberry fruit flavors. Big hints of green pepper with notes of earth and slate. A bit of a medicinal flavor on the finish. Low acid and can be served chilled. One of their last Long Island vintages. — 7 years ago
Surprisingly light colour but it sings in the glass. This seems to me to be low intervention winemaking - lots of sappy, honeyed red fruit and pure pleasure. Reasonably priced at $55, which seems to be what it costs in Ontario for a decent Pinot these days. — 8 years ago
