2020 vintage. This is the white Château Fernon Graves. 60% Sauvignon Blanc and 50% Sémillon. I am grateful to live in the Bordeaux region, where you can find great wines in any colour and price category. Bordeaux whites are terribly underrated, therefore offering exceptional value for money. This is a very good example, drinking beautifully now. Combining the exotic fruit and roundness from the Sémillon with the freshness of the Sauvignon Blanc, this is punching above its weight. We’re pairing our Christmas brunch with a very special wine that we brought home from our recent trip to Champagne. 🍾🥂 🇫🇷

As we open this wine, we recall our visit to Hervieux-Dumez; a family-owned and -operated Champagne Grower/Producer, and member of the Club Trésors, located in the bucolic Premier Cru Village of Sacy. 💕 @champagne_hervieuxdumez

This particular wine is a ‘Special Club’, an indication of its quality and the purity of its terroir-expression. To receive this designation, the wine must come from an exceptional vintage and satisfy two blind tastings at different stages of the winemaking process: the first occurs when the wine is still, just prior to the second fermentation in bottle, and the second takes place after 3 years aging in bottle. 👏👏👏👏

This wine is a beautiful pale, gold hue. The mousse is fine and delicate. ✨ On the nose and palate, this wine offers primary notes of yellow apple, pear, lemon curd, and dried white blossom; also secondary notes of bread dough, yeast, brioche, and cream. 👍👍This wine is wonderfully balanced and refreshing; it presents dimension and complexity. It’s delicious.

Merry Christmas from our family to yours! 🎄🥂

With brunch, we’re sipping a special bottle of bubbly from Champagne Hervieux-Dumez, a grower-producer located in Sacy, a Premier Cru Village in the Montagne de Reims region of Champagne.

We were fortunate to visit Hervieux-Dumez in the fall of 2021. We received a warm, welcoming tour of the property from Clément, who represents the fourth generation of this family business. We had the pleasure of tasting some incredible wines, including this one, which we brought home with us.

It's the ‘Cuvée des Rois de France’ – the ‘Cuvée of the Kings of France’ – named in recognition of Champagne’s history as the traditional site for the coronation of kings at the Basilica Notre-Dame in Reims. 👑 The village of Sacy played a special role in these events as a popular source of water.

This wine is a blend of Pinot Noir, Meunier, and Chardonnay, 50% of which came from reserve wines that aged a minimum of 60 months in the Hervieux-Dumez cellar. It is a medium lemon hue with a fine mousse and offers delicious notes of yellow apple, pear, white raspberry, lemon, blossom, wet stones, brioche, almond paste, and pie crust, with a lingering, elegant finish.
