Aged for 10 years in barrel.
This has well integrated components of the wood and is showing the deep harmonious notes of autumn; decaying leaf mould, slightly browning apple skin/pulp, clean hummus. It is all tertiary sweetness. — 2 years ago

Only about 2 years on wood. This has a bit of pear in it as well which shows in a delicate perfume of yellow skined fruits. This should be very interesting to riff with as a base for white spirit cocktails. — 2 years ago

As close to perfection as can be..,, smooth, silken, 2-minute finish. Nose of ripe, preserved, wrinkled apples…complete, complex, hints of baking spices, lighter than anticipated, but packing that 80 proof wallop. I anticipate most of bottle will grace a cool winter evening in front of the fire for 2 couples! — 10 months ago
