Blend of 50% Cabernet Sauvignon, 45% Merlot and 5% Petit Verdot, second wine of Château Paveil de Luze, aged for 12 months in French oak barrels, 25% new, deep Ruby with aromas of red berry fruits and cedar pepper spice. On the palate flavors of black fruits, currants and spicy notes. Lively acidity, fine tannins, medium+ finish ending with fruit, cacao and spicy oak. Drinking well now! — 3 months ago

We laid down this wine almost two decades ago in our home cellar, as the vintage year of 1996 was our daughter’s birth year. Now she’s 21 and the whole family was eager to sample what it had become. We went to the Brazilian churrascaria Fogo de Chao to make sure there would be plenty of different types of meat to pair with this well aged red. In a word—great. Silky and perfumed, earthy and complex, textbook aged Bordeaux. I couldn’t stop drinking it but made sure my wife and daughter got their share too!
