100% Pedro Ximenez from vineyards in Moriles Altos, one of the top areas within the Montilla-Moriles appellation. Vines are rooted in albariza (tosca hojaldrada) soils. Aged for an average of 3 years under flor in the solera system and bottled en rama (unfiltered). Intense nose with notes of toasted almonds and yeast. Sharp, very dry and saline on the palate. Straw brilliant color.
Fun nose reminiscent of Alsatian whites with a bit of aldehyde nuttiness.
Dry palate with smacking acidity and a long finish.

The Pasadas are a particular favorite of mine. Funkier manzanilla, and with a heavy winter coat of flor, even more.
N:Salt water taffy, salt water, almonds, while flowers.

N:Very saline, crystal sea water. old docks, but fresh. Not wet. Some oranges and a wee bit o vanilla.
P: Complex briny salt water. Tide pools,
Chewy but delicate. A powerhouse manzanilla from the west end of the bodega.
Delish.
