My goodness is this thing singing a song I do want to hear. Medium straw with a fine mousse. Fine, tiny bubbles that go on and on. The nose is delicate and gorgeous. Apple pie, lemon tarts, and green apples. Toasted rolls, nuts, and butter. After it transforms in the glass you’ll find floral and herbaceous notes along with a healthy dose of chalk.
Solera method. While 70% of this Blanc de Blancs is from the 2015 vintage, the rest is from a perpetual reserve dating back to 1986. Straight out of Cuis in the Cote des Blancs. Two years on lees and disgorged in late 2018. The acidity is electric and the champagne is brawny in spots but never sheds it’s ballerina like poise. Extra Brut dosage with 2 g/l and the terroir speaks so clearly and honestly here.
Everything here is very clean and very precise. Minerality and salinity with a twist of lime initially. Creamy and inviting throughout, the fruit is lively. Terrific balance and depth with a long finish. A most harmonious champagne. — 2 months ago

Older bottles of Chianti are some of the wine world’s unknown treasures. Everyone is happy to age Brunello but you don’t see many people putting away Chianti in the cellar. And they’re missing out. If you can find old bottles you can sometimes get them for a song, as I did a bunch of these from @garagiste_wine. You want to talk about punching above your weight?!? These suckers are classy AF. We must be getting old as my homeboy & I remembered when this was 20$— now it’s north of 79$. First, that incredible, shimmering copper color, as if a siren call to the rewards that await. So many layers that never seem to stop: sherry- like on nose, with high pitched iodine, but deeper & round on the palate. Hints of bergamot, cinnamon bark, oyster mushroom, clove, faded citrus fruit. So so alive. What a treat. Part 2 with slow roasted grapefruit chicken, roasted eggplant with yogurt sauce & the early innings of a another wild Mets win. — 2 months ago
14 years old and still singing like a song. Bright, sweetly balanced liquid lemon curd, with loads of pineapple punctuated with dashes of white asparagus that only that Loire vegetal train can bring. Lots of honey crisp/motts apple juice box all up in that mid palate. — 4 months ago
