Nose has mashed blueberry, sliced black cherry, wet soil, wet leather, black currant leaves, roses, syrup of dark fruits and damp peppercorns.
Palate has violets, blueberry/black currant juice, fresh black cherry, (light) moist spice cake and ripe elderberry. Persistent tannins prove this wine is still youthful, with a long/rich finish and juicy fruits on display. In proper storage this can easily be enjoyed, 2025-30+.
Cork pulled for a slow oxidation of 5H then decanted 4H.
We're big advocates of Burgundy wines paired to Asian-style food, tonight again with Taiwanese Five Spice Pork (Lu Rou Fan | 卤肉饭) over Jasmin rice with lightly fried eggs from our private egg factory in the backyard, plus locally raised NY pork (Highland Farm, Old Chatham, NY). The wine displayed its youthful tannins alone, but great acidity with the meal pairing. Happy happy! — 4 months ago

I'm always a fan of Burgundy wines paired to Asian food, tonight particularly with Taiwanese Five Spice Pork (Lu Rou Fan | 卤肉饭) over Jasmin rice with lightly fried eggs from our private egg factory in the backyard (and locally raised NY pork). The recipe traditionally calls for a soft poached egg, but we prefer lightly fried, no flip. I took extra care caramelizing the shallots tonight, and we reduced the volume of soy sauce. I think we've reached peak enjoyment on this particular dish.
Prior notes apply, decanted +6H based on prior experience, more time was better. Purchased pre-tariff for ~$22, this wine stands and delivers like nothing else, love me some Fass Selections magic!

Palate has dried blackberry, raspberry, dried cranberry, black licorice, medium acidity with a long finish; Great wine.

Apres avoir lu quelques commentaires faisant état d’oxydation sur le 97. J’ai donc décidé d’ouvrir la mienne. Très beau nez à l’ouverture, cela m’encourage mais rien n’est gagné! En bouche, c’est très bien, aucun signe d’oxydation ou de vieillissement prématuré. Tabac, eucalyptus, cèdre, sous-bois, champignons, vraiment sur le tertiaire. Aucune amertume, aucune sucrosité dérangeante des jeunes millésimes, les tannins sont fondus. J’ai bien aimé. La finale était un peu courte par contre. Si il vous en reste je les ouvrirais sans plus attendre. — 8 months ago
