Well, still interesting but not impressive. The miskateller takes over, giving it far too much elderflower n earth. Bit too big bubbles giving an aggressive mouthfeel. A little cloudberries clmes w time n temp.

Pretty unusual pet nat from Austria, not many bottles in London at the mo apparently so felt like a treat, smooth dryness and a touch of salt, into it. Yeah.

controvers recepted raw semi-sparkling wine (austrian law permits the labeling "perlwein") by martin arndorfer and alwin jurtschitsch (kamptal region), pouring the still fermenting most into bottles and sealing it, hence neither sulfurized nor filtrated.
bubbly raw wine - niche galore!
five blends were produced that maiden vintage to show consumers ancient sparkling wine techniques - you may wanna google "pétillant naturel", "méthode ancestrale" and "prosecco col fondo".
nr.2 is a blend of gelber muskateller and grüner veltliner, presenting elderberry flowers, orange cest, stone fruit and biscuit. even ideas of kombucha culture. exciting old stuff!
