Full of pristine peaches poached in cream, baked pears, and a sweet oyster note, this was much richer and fuller than I'd expect, but is lacking some flinty-ness that would have balanced the rich fruit. Still, this is plenty fresh to go another 5-10 years, and might develop more savory character by then. And I mean, I'm not going to turn this down if anyone offers me some....
