An attractive medium pink color with nice effervescence. Quite fruity on the nose with strawberries and blood oranges. The customary yeast aromas along with a nice infusion of herbs and oyster shells. The nose carries over to the palate with more fruit and a touch of apples and lemon cake in the mouth. There’s something of a spritzer effect here, in the best possible way.

A very clean and dry champagne, the extra brut dosage works wonders. Zippy acidity with a real sense of substance and of place. Delicious and refreshing. I need more of this.
