If you think Aligoté is only good for kirsch you should try one done by a top producer. Thibault Liger-Belair is one of them. There is only a small deficit of acidity that betrays the Aligoté. Other than that, a truly good white with balance and minerality. Drink up.

Rare Aligote grape white burgundy. Have to say, it was crisp, clean, grassy, oyster shells...definitely punches above its price point; 2014 with 5 years of bottle age tells me these has more years of evolution. Well made and tasty. Hard to find, but if you can, highly recommended.
