Working our way through the “Classic and Appellation “ List of matching Wines to the predominantly Seafood set menu at one of the best restaurants I’ve ever been to - Geranium Copenhagen. The 2007 was a difficult vintage in Champagne ie. no Dom that year. Norbert the Somm said an acidic and skinny vintage. Lean on the palate / no Brioche. Some salinity - low fizz. An excellent food wine - can see why it’s in the matching Wines list. I have always found Comtes to be elegant and restrained.

Medium gold, maybe just a little lighter than the 95 next to it. Great nose with persistent tiny bubbles. Not as complex or developed as it’s older sibling. Notes of apricot, lemons, and stones. Has the material to be the better Wine of the two but it’s still young, needs more time. BDay dinner 2/12.
