Family Estate Grown St. Helena Cabernet Sauvignon
First red on the cruise and given three hours in the decanter. Beautiful wine. Still semi-young in appearance with a deep purplish ruby red core and a touch of garnet on the edges. Complex nose with layers of cassis, dark spices, purple floral notes, tons of dark cocoa, and a touch of aged characteristics like forest floor. Heavy tannins (7/10) and full bodied. Well integrated and rounded. Layered palate with dark cocoa, soft dark fruits, plums, sweet spices and cinnamon. Long and lingering finish. Excellent wine with rib eyes. Drink till 2025.

I am biased, I am a huge fan of Spottswoode. I felt like a kid that robbed a candy store when I uncorked this one. I hadn't tasted their 2003! It was in my top three for wine of the night. Swing, batter batter swing, homerun!

The brick red color in this glass is still vibrant, all the way to the edge. I'm amazed how youthful this wine is. I initially popped & poured this cab. Quickly found out it needed a decanting. 30 minutes later, it's ready to drink. We just wanted another 🍷 of wine.
Full-bodied Cabernet . The palate has got a floral nose & taste (front of the palate) to it. Black cherry, blueberry. A touch of cola, tobacco & oak 😬. Spottswoode seems to always have these polished tannins to it. A moderate backbone of acidity. I'm certain after a little longer decanting 👏...drinking in it's prime now. Many more great years in front of it.
Edit- We only had half the bottle. I'm certain the management staff enjoyed the rest of that Cabernet.

Incredible extraction coming in waves of cassis and blueberry pie, blackberry compote. 45 second finish. Gentle but clear acidity and light tobacco-oaky tannins. Outstanding. Last bottle will wait at least 5 years, but near peaking.
