2022/8/28-30. I understand this contains at least some amount of Pinot Beurot. This starts out reminiscent of bruised apple cider - there’s a bit of a burnished, earthy, oxidative note. There’s plenty of intensity and personality, but for a while it seems a little rough and ready. It’s only on the second day, towards the end, and at a higher temperature than you’d think would work, that more elegance, minerality and depth are revealed. Fascinating.

This is so lovely. I want to keep smelling it. Nose of layer butter cream cake with banana filling, white flower, yellow ripe pear. Medium weight, good acidity. The pear flavor attaches to the acidity the moment it hits and then rides it whole whole time the mouth salivates. Added lemon rind, a touch of banana, butter cream yellow cake, and maybe a touch of marzipan. It’s zippy, not creamy and buttery. It has just aged so well.
