CoFerment Cider
New town pippin apples and mondeuse collab with phelan farms. Very much in the geuze framboise conversation but grainless which I very much appreciate. Apples are usually boring as hell and I feel whatever mondeuse they used here brought the right amount of fruit and fun to possibly what may have been kind of boring and serious. This is not a wine you would likely want to spend a lot of money on but boy do I want to drink A LOT of it.

Mar 19th, 2021This is the 2018 coferment with apple cider, Sauvignon blanc wine, and kefir leaves at the end. Excellent cider/wine. Definitely more on the funky cider. This one would be very refreshing on a hot day, but very complex. Tons of lime, grass, funk, apples, pear, an almond/marscapone like flavor as well. Most excellent!
