This is one of those bottles that you buy for the table and then just end up keeping it next to you all night. Creamy and soft, with butter and lemon in abundance and nice green fruit acid to complete it. I didn’t share a drop of this.

Pear, salt-preserved lemon, tarragon, honey, ginger and lovely minerality. Beautiful textural component that is balanced with rather bracing acidity. This wine has settled down considerably from a few months ago when I gave it a pass. Beautiful pairing with seafood/mushroom risotto. Outstanding.

Lots of apple up front but with air, once again, this white showed depth and volcanic-tinged complexity. I’ll give my next bottle at least an hour to open up.

I don’t think I’ve ever had a white that benefited so much from air. When we opened this at midnight last night, it was really dead, with almost no energy. But the nose was really complex, and the structure was there. So I put it in the fridge (vinovac.) Today, it’s excellent. Creamy length and plenty of flavor depth.
