well fuxk this tastes like apple cider vinegar and cat pee
okay i lied by day three i was guzzling this down and asking for more. i think it had some shiz that needed to off gas (very vinegary, should look up what that’s called) but then it turned into like a velvety almost overripe apricot taste? some secondary fermentation going on. zesty, warm, cidery, tropical also like the tannins

This is destemmed Chardonnay with ten epidermal days. Where the Marigny Chard highlighted its incredible fruit, Populis relies on the orangeness to mask the fruit. It’s straightforward and tame and easy.
All tangerine and Sour apricots
