well fuxk this tastes like apple cider vinegar and cat pee
okay i lied by day three i was guzzling this down and asking for more. i think it had some shiz that needed to off gas (very vinegary, should look up what that’s called) but then it turned into like a velvety almost overripe apricot taste? some secondary fermentation going on. zesty, warm, cidery, tropical also like the tannins

Tart, astringent apricot to start. Just a hint of the Chardonnay grapes beneath. Some funk. Astringency levels off and it becomes richer and mellower. Apricot still starring.

Oct 18th, 2022Really good! Not as bold as a Chardonnay typically is, but definitely still has some of that good oakyness alongside the floral funkiness of a good orange wine. Nice stuff.

This is destemmed Chardonnay with ten epidermal days. Where the Marigny Chard highlighted its incredible fruit, Populis relies on the orangeness to mask the fruit. It’s straightforward and tame and easy.
All tangerine and Sour apricots
