A beautiful, cool early Autumn evening, relaxing by a fire in the chiminea.

100% Pinot Noir, Disgorged February 2019.

Words escape me... Just wow!
(Notes later, I promise)

24 Hour Update:
Nose has yeasted dough, flat seltzer, limestone infused apple juice, hard crusted bread, oxidized red apple peel and bruised yellow apple.

Palate has tart yellow apple, saline puff pastry, faint lemon juice, limestone infused water, lemon zest with balanced acidity and a long, long finish. Outstanding.

The P-F wines always need a minimum of 24H open, 48H really if you have patience because then they open to just the most beautiful Champagne you've ever paid under $100 for, every time. No fear, the bubbles will wait over 48H so plan ahead for maximum enjoyment.

100% Pinot Noir, Disgorged November 2016.

Nose has freshly baked apple pastry, bruised yellow apple and wet limestone pebbles.

Palate has crusty bread, intense saline minerals, risen bread dough and a light squeeze of lemon.

Opened 48 hours ago, had a short glass, then into the refrigerator for 24 hours before initially enjoying. It's the best way to drink the P-F wines, give them air and be generous! Such an amazing wine!

Damn this is so refined and elegant! Creamy, yet the Pinot Noir just sings, I'm at a lack of words... Better as it gets air and warms. Brioche, mineral, f'n so clean on the palate...

24hr Update: If you could make an apple bread, yet preserve the freshness of fresh cut green Apple, this is that flavor, also I you left the bread in the oven 10 minutes longer than you wanted, so damn the crust is a little more crispy than you expected... Yes, I'm rambling, but this bottle, it's just amazing today, so one more point!
