NV Chablis vintner Patrick Piuze makes this 100% Chardonnay sparkling, which comes from Burgundy (tells my wine merchant) although it is ‘product de France’. I think grapes are allowed from all France wine regions. Big bubbles and a stormy first impression. Chard true to type. Elegant and with excellent p/q. Paired with my last goose rillettes as a starter. I like this sparkling.

I'm an unabashed fan of this producer's Chablis --who isn't!-- but the sparkling wine just doesn't do it for me. I get green apple, an incidental, vague whisper of autolytic character, a saline quality, lots of lemon juice, and...nothing more. Finish is short, and effervescence is rather feeble. Tried 3x, including one bottle cellared for a year in the hopes that there'd be some improvement with bottle age, but no.
