Coenobium Lazio Bianco Trebbiano Blend

Honeyed, herbal and quite textural
I enjoyed at best when it was room temperature

30 days of skin contact. Volcanic soils. Subdued on the nose. Tangerine, sea salt, ripe apricot, white cherry, white blossoms, unfiltered. Elevated phenolic bitterness was balanced by med+ acid and intensity. 11% abv.

Delicious. Steely acidity. Lots of citrus.

キノコのトマト煮や、案外キムチが合って面白かった。

Good summer white that can pair with a wide range of food types. In this case we had a mix of Chinese/Southeast Asian dishes. It has a dry enough finish not to interfere with any of the various spice notes. Lemon/lime acidity mixed with a hint of white floral tones.

Bubblegum nose. Creamy. White tea, flowers. Salinity. Very delicate.

The wines of Coenobium are made by a sisterhood of nuns from the Latium region of Italy close to Rome. They make two wines. Both varying degrees of Orange. That’s it.
The Bianco is barely Orange, with a Corona appropriate level of skin contact (barely any).
I’d lump these into the OG category of Natural Wines - they see consulting from the god of Italian Orange, Mr. Bea.
Pours hay with notes of apples and white flowers and salty peachy flavors.

Better the second day when the acid came to the forefront. Light,floral, and slightly bitter in a good way. Not enough going on at this price point. Rosenthal.

Quarantine Day 6: A tea and eucalyptus thing in the nose. I swear there’s some kind of cooling herbal smell in there. Honey and salted melon on the pallet.
