A truly great South American Cabernet, just give it lots of room to age and decant. No jammy stuff here, elegantly evolved dried red/purple fruits, dried sage and dry earth; plenty of leather and rehydrated cherry with a satisfying, long finish. Disappointingly our final 2004 bottle from a 3-pack buy in Nov. 2007 for $28/ea; value delivered and patience rewarded!
Old school bottle, so thick walled it could go to bat for any inning or bounce off the pavement without concern...

A Southern 🌍🌏🌎 Hemisphere wine theme for a small dinner with a dear friend. Some older bottles from our cellar and some younger bottles from another cellar. Paired this evening with Asian-style braised beef short ribs (Kinderhook Farm; Valatie, NY) and grilled polenta.

Fruit forward: black cherries, currant, plums, & the faintest hint of peach to mellow the back end. Softer bouquet than other Cabernet Sauvignons, but definitely voluptuous. Traditional graphite, beef blood, and leather present accompanied by moss/wet earth. Tannins milder than others, lend the medium plus body a velvet texture and finish

Aug 11th, 2021This is Cabernet Sauvignon from Chile from old vines. Dark ruby color. Bright bright black fruit at opening; after an hour aeration, chocolate and oak notes. Big sweet blackberry notes on the pallet with hints of vanilla with finishing notes of dry earthy black tea, smokey even. Strong tannings with a composed finish. Robust wine, bold, strong and complex. A proper cab!
