Steve, not quite all that as you make it sound like Coche Corton Charlie but great effort. Like the secondary flavors from the extra fermentation which adds a texture and nuance and that uniqueness is what you should seek.

Oct 23rd, 2014Delicious if curious and subtle, the main flavor here was honeysuckle, and there was some yellow apple if I looked for it. With a beautifully balanced structure, I imagine this being perfect with delicate seafood. Worth another try for sure.
