Our last bottle, on the old label design. No new notes today, but I must comment that this bottle gets better every time we open one, so amazing!

Nose has sweet pear, dried apple slices, subtle oak and dried bread.
Palate has honey drizzled pear, red apple flesh, bread dough, fresh green apple peel and lightly saline mineral paste on the long finish.

Second Marie Demets bottle this weekend, such wonderful stuff, and a great price ($36)! This bottle and the regular Brut bottle are our new favorites.

The "tete de cuvee" from Demets. Complex nose of apple skins, yeast, brioche and some nice mineral accents. Full bodied, complex and so juicy. So well made and precise. Lovely sappy fruit and concentration.

Again, not sure of disgorgement date. Yeasty and rich with loads of sour apple and citrus on the nose. On the palate, excellent acidity, and the fine bubbles give this nice texture. Very tasty and improved with time open.
