Drank nearly a month after it was first opened, it didn’t quite win any hearts on this occasion. Very nutty, perhaps a touch too much discernible VA, spices for sure, plus some vegetal and dried fruit notes. Could have used more drive too, I felt. Probably not the best sample.

NB: Not the Chateau Chalon, but the Chardonnay Sous Voile Cotes du Jura.

Persuaded to try this by a very affable server at The Remedy here in London, haven’t been drinking much sous voile Jura stuff and now I’m regretting it because this was ethereal; after the expected reductive hit there is a fresh minerality and almost water-like balance, just fantastic. Grab an ice bucket and cool or warm as to how much bite you want.

Deep gold
Pronounced nose. Sherry like. Nutty, golden stone fruit, yeasty. Green - guava.
Dry, high acid, high alcohol, medium plus body, gently tannic grip, salty, nuts, golden fruit, round effect but not rounded, very long finish. Amazing

Love this wine twice a year. Nose is of course oxidized. Palate is super juicy. Dried apricot. Peach. Delicious. Persistent long finish. If people could get past the nose this would be double the price.

Chardonnay oxidized to the point of being sherry like. Very good, but not super food friendly, unless it would be something very, very fatty.
