Pale green-tinged lemon with crisp, mineral-laced nose with loads of lemon curd and pastry on the palate. It's showing its coming maturity with a hint of almond extract on the finish and a bit of hazelnut, the quality of well-aged chardonnay. It really shows its no-dosage character - bone dry, it begs for food. Oysters, anyone?

Pure yeast notes on the nose. Bone dry on the palate. Calcium overload with crisp Granny Smiths. Not our style. The name suggests that this wine is close to nature, and it certainly is somewhat raw.

Precise, slender, avant-garde. Balance is king! Freshly cut apple skin, bony pear and stone fruit kernels. Goes from woody to steely and back again. Then a deep vinosity kicks in and leaves a soily-spicey linger. Most refined Brut Nature! Masters at work! Paired w/beef gulash.
