Paired to Asian-style food, tonight with Taiwanese Five Spice Pork (Lu Rou Fan | 卤肉饭) over Jasmin rice with lightly fried eggs from our private egg factory in the backyard. Locally raised NY pork (Highland Farm, Old Chatham, NY).

A bit bright red wine color. Cherry and plum aroma. Silky. Still tannic and acidic, need to decant. Deep aroma, being drawn into the glass, spicy. Match with roast duck etc. 1 hour, 1.5 hours, still changing. 1.5 hours is almost same as last time, concentrated, deep, dark cherry, enough spiciness. Color is also different from the initial. Fruity, rich. 2011 @3680, Datong - XH, 190917-190924
