Dough, green plantain, apple, a little leafy on the nose. Intensely aromatic, lots of very fine bubbles. Bright, racy palate of citrus, apple, minerals, with some bitterness on the finish. Very good but a little austere, and the NV blend may be the better value?

Really enjoyed this champagne. Was quite vibrant with a very clean crisp taste. Paired well with the lobster tails and risotto!
