Hilltop Paso Robles Cabernet Sauvignon

The 2021 Cabernet Sauvignon Hilltop lifts from the glass with a peppery freshness, mixing hints of sage with chalk dust and blackberries. It's soothingly round and supple with ripe red and black fruits underscored by saline minerals as grippy tannins mount toward the close. Where’s the beef? Oh wait, it’s liquified and stuffed in this bottle with splashes of teriyaki. But is it a liquid because I swear I’m chewing it.

This Cabernet is really fruit forward in style, I know some like this type of flattering wines, I don’t really appreciate this any more. The nose is full of dried blackberry, dried blueberry, berry jam ,berry sauce ,black cherry , cherry syrup, prunes and cedar wood, medium to full body, round and lightly sweet due to high alcohol level, finish is fruity and intense. My score 87, drink to 2022

HUGE wine. Very extracted and dark fruit profile. I guessed corvina ! Wtf #SommCon

Must be decanted. Flat before, full bodied after and bursting with berry.

Blackberry, slightly smokey, fruit toward, full body but not too heavy or dry. Very good for an everyday bottle at $30.

Dark color. Plum juice nose. Sweet blackberry touch of grilled meat. $31

WOW!! Incredibly smooth, well refined and like an angel gently caressing your tongue with a whisk of mature red fruit, a slight bit of jam and a clean, finish. A satisfying mouth feel all the way through, and lingering notes of light smoke, wood and vanilla. I wish I had picked up a second bottle!

Enjoyed with steak. OMG was this a great wine. Fruit, black pepper, little tabaco, very smooth with nice finish. Want more.

Simple straightforward American Cab. Not worth the money over the every day J Lohr sadly.
