Purple-garnet red, very good clarity, medium extracted pigment. Butter, blueberry, raspberry and cherry cola aromas, soy-umami flavors with berry and cola in mouth. Umami finish with lingering cool fruit. Those lingering yeast cells are integral to this wine. Some astringency and bitterness as well but challenging to characterize. After 60 minutes, resolves into an umami-rich pinot with raspberry, plum and cherry flavors, decent acidity. Give it an hour before drinking in earnest

Purple-red, moderately extracted pigment, good clarity with minor residue (it is unfiltered). Hints of butter, wood and cola in nose. Bright acidity, a touch of soy-umami in the flavors. Slightly gritty aftertaste on initial pour (it’s unfiltered!) Still assessing as it opens up... Cola flavor emerges after ten minutes, barrel tar aroma after thirty.

What a luscious wine. It opens with a deep and wonderful forest floor nose, and then the approach is lush and bright with that classic Pinot cherry ripeness, and a fresh acidity with a long earthy finish.

With a slow-roasted salmon: yum. Just yummy.
