I used to really hate the expression “it is what it is” but I find myself using it more and more of late.

The truffled steak tartare probably needs just a touch less rusticity and a bit more upfront fruit.

Dark and juicy fruit, scorched earth, laced with dusty tannins, and with luminous acidity. Excellent expression of terroir from young 10 year old vines, outstanding value.

Vines are espalier trained, in conversion to bush vines. Grown at 650 m. Whole cluster maceration in concrete for 1 week. Matured 9 months in concrete vats.
