Cinnamon and I took a little drive out to Bresse today in search of poulet and visited the Hospices du Beaune. Bresse chicken, vrai chanterelles and potatoes go together quite well. This was very stylish, young Burgundy with fancy oak and ripe but not at all overripe black fruit. Long finishing classy stuff seems to be the norm here!!
