Santorini

Bright and clean, with medium weight to it. Stone fruit notes with balanced acidity.

A bit of CO2 at first but the bubbles go away after a while. On the nose : a bit of honey, peach, hay. Interesting and profound. The palate is wide and full of fruits, the acid backbone is a bit overwhelmed except at the end where the acid backbone comes back to drive the palate to a moderately long finish with peach. Cool wine !

Not my favorite, was trying something new and didn't expect how minerally it would taste. Got better as I got used to the unexpected taste

Apricots, Honey and wildflowers. Beautiful balance!

Texture mineral magic. Just never get tired of Hatzidakis. Sad that this may be the end of an era.

Has a lot of what I like about Santorini Assyrtiko (saline mineralogy, wildly aromatic), could probably use a couple years to take the edge off of the substantial tannins.

One my favorite whites! Great minerality and salinity. Went great with pork shoulder sous vide with tomatillos and sambal.

Not a big fan of the after taste. Still drinkable, but don't get it again

Slight brininess on the nose and to the taste. You get some apricot and honey; and a salty aftertaste.
