The rarest sherry I've ever tried... Probably one of the best too (they're often not linked). Decades old fino. Freshness, complexity and persistence for minutes. The story of these Palmas is amazing and too long for here. Look up the piece written recently in Food & Wine's blog.

58 year aged sherry. Unbelievable complexity. Salinity, mushroom, toasted hazelnuts, high acid and long finish.

Insanely complex with notes of toffee, hazelnut, browned butter and button mushrooms. Bone dry, nodding it’s head to its fino heritage. Only 150 bottles released from a 50-80yo solera annually. Bottles em rama. Amazing.

So many things I could say about this #amontillado suffice it to say that this is one of those wines that you plan the food around the wine

Subtlety is king here. All the notes you're looking for, but delicate and finely balanced. 47 years old. Stunning and austere.
