This is a white wine with serious complexity. Great texture with gripping minerality and flavors of apple and peach skin that endure on the long finish. Some intriguing savory notes as well and of course plenty of acid.

This wine is perfect when you are looking for a Sauvignon Blanc with more muted pyrazines. The flavor profile skews heavily towards mineral, stony, and dusty notes, rather than vegetal or fruity flavors. Think Muscadet in Sancerre clothing!

Closer to a Pouilly Fume, with an explosive nose full of pear tart, ripe Mirabelle plums, gooseberry jam. Only after some time the typical grassy & mineral notes start to emerge. Rich as well on the palate, round & creamy (14,2% alc and noticeable wood), yet nicely balanced. A v. good wine, if not exactly my preferred style. Or opened way too early.

Absinthe had the '00. Beautiful, balanced and light wine. Slightly mineraly, thanks to the Silex.
