Popping the cork, and pouring the Cava into a chilled glass I noticed a nice straw pale yellow color and gave off a fruit forward style of peach, apple and citrus. Frothy mousse with small plentiful bubbles. Aged for up to 12 months, the Cava was well-balanced, full-bodied, crisp with zesty fruit, minerality, bread tones on a long finish. This is an outstanding, easy drinking sparkler, and presents an alternative to a pricy bottle of French Champagne. Exceptional!

I am a firm believer that bubbles should not only be reserved for special occasions (or Sunday brunch). This bottle - a shocking $6-7 price tag for a traditional method sparkler - smells like a sweet dessert wine; apples and pears baked into a pie. The taste, however, is dry and citrusy, if a bit bland. Best for mimosas.

A nice cava. We tried it in Spain, and found it at Trader Joe's! Better than the other imports we've found, which stink compared to what's available in Catalunya.
