2014 is a solid vintage. We could stand to learn a thing or two about keeving cider varietals of pears here in the Pacific Northwest as Eric Bordelet does so expertly in Normandy.

First observation is that the bubbles are less numerous than those of Champagne or an inexpensive sparkling cidre. The first sip yields to the other four senses a reassuring fizzy bite that is largely undecectable to the eye. Pear skins, roses and honeysuckle on the nose. Peach, preserved lemon and a subtle, unique bitterness on the palette. As usual, Eric Bordelet delivers.
